Volans Ultra Premium Tequila
Three Rivers Ranch would like to introduce our award winning brand of Tequila: Volans Tequila.
Volans Tequila is the finest handcrafted ultra premium tequila, born in the highlands of Jalisco, Mexico. Slow-cooked, double distilled, using historical & traditional methods that are completely sustainable. We use only the highest quality and sweetest Blue Weber Agave, and age it for over three and a half years in American White Oak barrels.
We are a fourth generation family run business located in Idaho with deep family ties in Jalisco, Mexico. Our goal was to bring the best tequila Jalisco has to offer to the United States. In 2015, we interviewed over 90 distilleries in Jalisco, but there was one place that stood out. We found a partner with Master Distiller, Felipe Camarena & El Pandillo Distillery, the highest rated tequila distillery in the world (TequilaMatchmaker.com). They not only make the best tequila in the world, but they are also a fourth generation family-owned business that puts a high priority on traditional and efficient methods, quality, sustainability, and are environmentally friendly.
TRADITION + INNOVATION
We use historical & traditional methods of making tequila, but we also made some improvements in the process. We wash all of our agaves & then cut out the bitter-tasting ‘cogollo’ on the male plants. We then cook our Agave in a bi-directional dual steam-powered stone oven for over 22 hours. ‘Igor’ the proprietary agave shredder, shreds our Agave and ‘Frankenstein,’ an ultra-efficient mechanical tahona tenderly extracts the sweet juice of the Agave with 20,000 lbs of force.
We use a superior blend of natural spring, rain, & deep-well water (450+ ft) for just the right minerality and use a unique and closely guarded multi-generational strain of natural yeast. We then distill our mosto twice in copper stills.
100% BLUE WEBER AGAVE
Agave Tequilana or Blue Weber Agave is at the center of any great tequila. It can take up to an entire decade before one agave plant reaches full maturity. Soil, climate, sun exposure, topography, and years of dedicated hands-on care all influence the sweetness and flavor of our tequila. The Los Altos region of Jalisco, Mexico lies approximately 6800 feet above sea level. The cool and dry climate allows our Blue Agave to mature slower, allowing the piñas to grow larger and sweeter.
AGING PROCESS
To be called Extra Añejo, a tequila needs to be aged at least three years. We age our tequila in American White Oak over three and a half years and let our casks sleep in an underground environment that experiences little to no temperature changes.

TASTING NOTES
“Wow, where do I start with this one. First, it’s fantastic. The color is as light as most reposados because it has been aged in 20+ year old used bourbon barrels for 3 1/2 years. But don’t let the color fool you. The aroma and flavor shows every bit of character that you want in an extra añejo, including agave. You’ll find a lot of gentle and natural vanilla and pitted fruits in the aroma and flavor, and a nice fruity flavor that lingers on the palate along with cooked agave. Only 1,000 bottles made, so this one is a rare find. Grab it if you can.”
